My Story – How I Fell in Love with Thai Food Culture

Hi, I’m Amit Hadar, a cook and writer passionate about authentic Thai food culture — from Bangkok’s street stalls to the markets of Chiang Mai , and for the past four years I have dedicated myself to exploring Thailand through its food, culture, and people. What started as travel grew into a serious pursuit: documenting culinary traditions, understanding regional differences, and connecting with the people who keep these traditions alive.

I bring over three years of hands-on professional experience working in a Thai restaurant In Tel Aviv (Giveret kwaytiew) where I trained directly under Thai food master Mati nakash who was the first one to introduce me to Thai cuisine, and collaborated daily with Thai colleagues. This experience gave me not only technical skills but also an insider’s perspective on the values and rhythms that shape Thai cuisine. In addition, I’ve studied with respected teachers and participated in specialized master classes that deepened my knowledge of traditional cooking methods, local ingredients, and cultural context.
